In botany, a scape is simply a leafless flower stalk typically produced by a bulb such as a tulip or even an
allium. In produce, a scape typically refers to the flower stalk of the garlic plant, which may be used like a vegetable but with the flavor of garlic. These stalks from my CSA are currently sitting in a vase until I decide what to do with them.
