Suon Nuong with broken rice has always been my favorite Vietnamese dish. Next to crispy spring rolls, of course. the chops are marinaded for many hours in a mixture of fish sauce, garlic, shallots, and oil. In this case, I added a quarter cup of honey for a sticky glaze that was perfect on the grill. The pork is flavorful, light, and juicy. I served the chops with nuoc cham, a traditional dipping sauce, over jasmine rice with chili oil and pickled carrots.
